Ingredients

  • 1 2/3 lb potatoes,
  • 1 2/3 lb sweet potatoes,
  • 1 1/4 lb pumpkin,
  • 9 oz beetroots,
  • 1 lemon,
  • 1/2 bunch fresh chives,
  • 3 ActiFry spoons olive oil,
  • 5 oz crumbled crackers.

Step 1

Grate the vegetables separately, ending with the potatoes. Add a spoonful of oil to the grated potatoes, one to the grated pumpkin, and one to the grated sweet potatoes.

Season each with salt and pepper and add the grated potatoes to the ActiFry. When cooked, remove and start cooking the sweet potatoes. Cook the pumpkin last. Shape the grated vegetables into a loaf.

Remove the zest from the lemon and juice it. Cut the zest finely and chop the chives. Sprinkle both over the vegetable loaf. Sprinkle with the juice. Cover with plastic wrap and chill for 12 hours pressed with a weight.
