Lemon Ginger loaf

Ingredients
- 2 lemons to produce 5 Tbsp juice and 2 Tbsp rind
- 1 1/2 c flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp nutmeg
- 1/2 c butter
- 1 1/4 c white sugar
- 2 eggs
- 1/2 tsp vanilla
- 2/3 c milk
- 3/4 c chopped crystalized ginger
Details
Preparation
Step 1
Mix flour,baking powder,salt and nutmeg with rind
Beat butter well
Add 1 cup sugar and 2 Tbsp juice and beat
Add eggs one at a time
Add flour alternately with milk
Fold in the ginger
Place in a well greased loaf pan and bake at 350 for 1 hour 15 min.
Mix 3 Tbsp juice and 1/4 sugar and spoon over the top
