Ingredients

  • 2 lemons to produce 5 Tbsp juice and 2 Tbsp rind
  • 1 1/2 c flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp nutmeg
  • 1/2 c butter
  • 1 1/4 c white sugar
  • 2 eggs
  • 1/2 tsp vanilla
  • 2/3 c milk
  • 3/4 c chopped crystalized ginger

Preparation

Step 1

Mix flour,baking powder,salt and nutmeg with rind
Beat butter well
Add 1 cup sugar and 2 Tbsp juice and beat
Add eggs one at a time
Add flour alternately with milk
Fold in the ginger
Place in a well greased loaf pan and bake at 350 for 1 hour 15 min.
Mix 3 Tbsp juice and 1/4 sugar and spoon over the top
