Cucumber salad

Ingredients
- 2 cucumbers
- 2 Tb white vinegar
- 2 Tb lemon juice- fresh squeezed tastes better
- 2 Tb vegetable oil, not olive oil
- 2-3 Tb sugar
- parsley (sprinkled to taste)

Step 1
Peel and thinly slice cucumbers (I use a hand grater with a slicing side).
Layer the slices into a colander. Sprinkle the top lightly with salt. Set a heavy bowl on top of the cucumbers. Allow to sit about an hour, the salt will draw water out.
Pressing on the bowl will help eliminate the water.
An alternate procedure if time allows is to place the cucumbers in the fridge in a plastic container and drain the water out after several hours.
In a small bowl add equal parts of:
2 Tb white vinegar
2 Tb lemon juice- fresh squeezed tastes better
2 Tb vegetable oil, not olive oil
2-3 Tb sugar
sprinkle parsley to taste
Stir the ingredients briskly to dissolve the sugar. Taste to determine how sour/sweet the mixture is.
Pour over well drained cucumbers. Mix well.
Allow to chill several hours.
