sunrise country sausage & bacon casserole

Ingredients
- 10 Large Eggs
- 3 cups Milk
- 1 tsp Ground mustard,
- Kosher salt &
- ground black
- pepper, to taste
- 1/2 lb Sliced bacon
- 1/2 lb. Breakfast sausage
- patties, crumbled
- As needed Non-stick cooking
- spray
- 7 slices White bread cut in
- to 1-1/2" cubes
- 2 cups Fancy shredded
- Cheddar cheese.
- 1/2 cup Green pepper,
- medium, diced
- 1/2 cup Red pepper, medium
- diced.
- 1/2 cup Scallions, sliced
- thin

Preparation
Step 1
1.Preheat oven to 325deg. 2. In a medium bowl, whisk together eggs, milk, ground mustard and salt and pepper to taste; set aside. 3. Cook bacon in a large saute pan until crisp; drain. Cut into 1" pieces and set aside. 4.Cook crubled sausage in a large saute pan over medium heat until cooked though; drain and set aside. 5. Generously spray a 9x13" baking dish witb cooking spray. 6. Layer half of the bread cubes, bacon, sausage, cheese, peppers and scallions into the baking dish; repeat layers with remaining ingredients. 7. Pour the egg mixture into the baking dish; stir to evenly distribute the mixture. 8. Bake until the center of the casserole is set, about 1 hour. 9.Remove from oven, and let rest for 10 minutes before cutting. Cut into squares and serve.
