Ingredients

  • 2 T OJ
  • 2 T lemon juice
  • 1/2 tsp salt
  • 1/2 tsp cumin
  • 1/2 tsp hot sauce
  • 2 (15 oz) cans black beans, rinsed and drained
  • 1 cup cooked white rice
  • 3 plum tomatoes, seeded and chopped
  • 1 red bell pepper
  • 1/2 green pepper
  • 2 green onions
  • 1 celery rib , diced

Preparation

Step 1

whisk together first 6 ingredients. Add beans and remaining ingredients. Toss to coat. Refrigerate 1 hour. Yields 6-8 servings.
