Ingredients
- 1 lb turkey
- 3-4 T olive oil
- 4 medium carrots, sliced 1/2 inch thick
- 8 small red potatoes
- 1 stalk celery, chopped
- 1 large onion
- 4 cloves garlic
- 2 T flour
- 10 3/4 can chicken broth
- 1 c dry red wine
- 1 t thyme
- 1/2 t pepper
- 8 oz mushrooms, sliced
- 1 c chopped parsley

Preparation
Step 1
Cut turkey into ½ inch thick slices. Place turkey, carrots, onion, potatoes, and garlic in pan. Cook about 10 minutes. Sprinkle flour over mixture. Cook and stir 1 minute. Stir in chicken broth, wine, thyme, and pepper. Bring to a boil. Add mushrooms. Bake at 350 for 50 minutes to 1 hour until vegetables are tender. Stir in parsley.
