Fresh Corn Quiche

  • 3 c. fresh corn kernels
  • 3 large eggs
  • 1/2 small chopped onion
  • 1 Tb flour
  • 5 tsp sugar
  • 1 c. half and half
  • 3 Tb melted butter
  • pie crust


Servings 8


Step 1

Preheat oven to 375

Puree 1 cup of corn, add eggs, onion and flour. Blend until onion is finely chopped
Add half and half and butter, process until blended. Transfer to large bowl, fold in remaining corn.
Pour into pie crust

Bake 50 mins or until filling is slightly puffed and golden on top

Serve warm
