Ingredients
- 1 1/2 c potatoes, cut into 1/4 inch chunks
- 1 garlic clove
- 1/2 t salt
- 1/8 t cayenne
- 1/4 c Parmesan
- 1/4 c flour
- 2 c skim milk
- 5 oz cheddar, shredded

Preparation
Step 1
Place potato slices and garlic in saucepan and cover with water. Bring to boil and cook 8 minutes or until tender. Drain and discard garlic. Place flour, salt and red pepper in a large saucepan. Gradually whisk in milk until blended. Cook over medium heat until thick and remove from heat. Stir in cheese. Arrange half of potatoes in baking dish which has been sprayed. Pour half of sauce over slices. Repeat with remaining potatoes and sauce. Sprinkle with parmesan. Bake at 350 for 25 minutes.
