Ingredients
- 1 package lemon pie filling mix (regular not instant)
- 1/3 cup sugar
- 2 1/4 cups 7-up
- 2 eggs, separated from whites (reserve whites)
- 1 teaspoon grated lemon peel
- 1 package (3oz) cream cheese, softened
- 1/4 cup sugar
- 1 prepared graham cracker or regular pie shell, baked

Preparation
Step 1
Combine pie filling mix with sugar and add 1/4 cup 7-up in sauce pan.
Blend in 2 egg yolks, then add remaining 7-up. Stir constantly over medium heat until a full boil is reached. Remove from heat. Add lemon peel and gradually stir into softened cream cheese, beating until smooth.
Beat egg whites until soft peaks form. Gradually add sugar beating until stiff peaks form. Fold into lemon mixture. Pour into baked pie shell and chill until set.
Keep refrigerated
