Baconed Hominy

Ingredients
- 8 strips bacon, diced
- 2 lbs cooked hominy
- salt and pepper
- green onion, roughly chopped
- 1 cup grated sharp cheddar cheese
- Extra cheddar, bacon, and/or chiles for sprinkling

Preparation
Step 1
In a large pan, fry the bacon pieces until browned and crisp.
Add the hominy, salt and pepper and cook stirring constantly 6-7 minutes.
Add cheese, green onions and continue cooking until cheese is melted.
Pour into casserole dish and bake at 350 degrees until golden brown.
