Tuna Burgers

Ingredients
- Sauce:
- 2 lbs fresh sashimi grade tuna, cut into chunks
- 3-4 cloves garlic, minced or grated
- 1 piece gingeroot, peeled and grated
- 1 small bunch of scallions, minced
- Black pepper
- 3 tbsp tamari or ponzu sauce
- Stir fry or canola oil
- 4 brioche buns
- Pickled red onions
- Pickled ginger
- 3/4 c creme fraiche or aioli
- 2 tsp wasabi paste
- 3 tbsp chopped chives
- Zest and juice of one lime

Preparation
Step 1
Pulse tuna in a food processor to chop finely, then gently combine with other patty ingredients. Form 4 patties and coat with oil.
Grill over medium high heat. In a small bowl, whisk together sauce ingredients.
Cook burgers to medium rare/medium. Serve burgers on toasted buns topped with pickled red onions, pickled ginger and special sauce.
