Ingredients

  • Sauce:
  • 2 lbs fresh sashimi grade tuna, cut into chunks
  • 3-4 cloves garlic, minced or grated
  • 1 piece gingeroot, peeled and grated
  • 1 small bunch of scallions, minced
  • Black pepper
  • 3 tbsp tamari or ponzu sauce
  • Stir fry or canola oil
  • 4 brioche buns
  • Pickled red onions
  • Pickled ginger
  • 3/4 c creme fraiche or aioli
  • 2 tsp wasabi paste
  • 3 tbsp chopped chives
  • Zest and juice of one lime

Preparation

Step 1

Pulse tuna in a food processor to chop finely, then gently combine with other patty ingredients. Form 4 patties and coat with oil.

Grill over medium high heat. In a small bowl, whisk together sauce ingredients.

Cook burgers to medium rare/medium. Serve burgers on toasted buns topped with pickled red onions, pickled ginger and special sauce.
