Warm Carrot Salad

Ingredients

  • 1.5 kg carrots, peeled
  • 1 large garlic clove, peeled
  • 2 tsp cumin seeds, toasted
  • 1 tsp honey
  • juice of 1 lemon
  • small handful of raisins
  • small handful of pine nuts, toasted
  • 2 tbsp olive oil
  • 1 bunch coriander, roughly chopped

Preparation

Step 1

Boil carrots whole in lightly salted water until just tender. Mash garlic with a pinch of salt in pestle and mortar, add cumin seeds and crush. Stir in honey and lemon juice.

Drain carrots and let cool a little, slice diagonally into a bowl and toss with dressing, scatter raisins and nuts and drizzle with oil.

Let stand and serve warm or at room temperature. Add coriander just before serving.
