Ingredients
- 7-lb first-cut beef rib roast, 3 ribs, set at room temp for 3 hrs, trimmed & tied
- 1 TBL vegie oil
- S & P

Preparation
Step 1
with 2 pieces of kitchen twine running parallel to bone, tie roast at both ends to prevent outer layer of meat from pulling away from the rib-eye muscle & overcooking
adjust oven rack to lowest position & heat to 200
pat roast dry w/ paper towels
heat oil in lg. roasting pan over 2 burners set at med-high heat
place roast in pan
cook on all sides until nicely browned & abt 1/2 C fat has been rendered, 6-8 min
remove roast from pan
spoon off fat from roasting pan
set wire rack in pan
set roast on rack
season w/ S & P
place roast in oven & roast until meat registers 125 (med rare) abt 3-2/1 hrs (or abt 30 min. pr pound)
let rest for 20 min
transfer to carving board & carve
