Spinach Empanadas

Ingredients

  • Filling:
  • 2- 8 oz cream cheese, soft
  • 3/4 C butter
  • 2 1/2 C flour
  • 1/2 t salt
  • 1/4 C chopped onion
  • 3 cloves garlic, minced
  • 4-5 slices bacon, cooked and crumbled(reserve 1 T bacon drippings)
  • 1 10oz package frozen chopped spinach, thawed and drained.
  • 1 8oz container cottage cheese (1 C)
  • 1/4 t pepper
  • 1/8 t ground nutmeg
  • 1 egg, beaten

Preparation

Step 1

For pastry: Beat cr cheese and butter til smooth. Beat in flour and salt. Knead dough lightly by hand. Cover w/ plastic wrap and frig for 3 hrs.
For filling: In med skillet, cook onion and garlic in the reserved bacon drippings for 3-4 mins til onion is tender but not brown. Stir in crumbled bacon, spinach, cottage cheese and pepper and nutmeg. let mixture cool. Heat oven to 450. Roll out pastry on floured surface to 1/8". Cut w/ 3" biscuit cutter, cut as many circles as possible. Place 1 t filling on 1/2 side of each circle and fold over other side of circle to form crescent shape. Brush circle edges w/ beaten egg and close, crimp. Brush top of 1/2 circle w/ egg, bake til browned.
