Potato Salad

I never cared for Potato Salad until I found this recipe. I've been taking this recipe to parties for many years and am always complimented on the taste.

Ingredients

• 1/3 C sugar
• 1/2 C milk
• 1 Egg
• 3/4 T celery seed
• 3/4 t salt
• 1 T cornstarch
• 1/4 C vinegar (cider)
• 4 T butter, unsalted
• 1/4 t dry mustard
• 1/4 C chopped onion
• 7 medium potatoes
• 1/4 C mayo
• 3 hard boiled eggs

Step 1

Cook potatoes till soft but not mushy. Peel and cube.

Mix first 9 ingredients in saucepan. Cook & stir till thick & bubbly. Remove from heat; add onions and mayo. Cool. Combine potatoes and eggs. Stir in dressing. Chill. Just before serving, sprinkle w/ paprika.
