Creamy Potluck Potatoes

Ingredients

  • 5 large potatoes (peeled and chopped, approx 7.5 cups)
  • 1 - 10 3/4 oz can condensed cream of chicken
  • 1/2 cup dairy sour cream
  • 1/2 of 8 oz cream cheese, softened
  • 1/2 of 1/2 oz pkg butter (2tbl)
  • 3/4 cup shredded sharp cheddar cheese (3 oz)
  • 1/4 cup skim milk
  • 1 tb dried parsley flakes
  • 1/4 tsp garlic salt
  • 1/4 tsp pepper

Preparation

Step 1

1. Cook potatoes in water for 10-12 minutes
2. Drain. Rinse with cold water and drain again
3. Mix in large bowl: cream of chicken, sour cream, cream cheese and butter
4. Add 1/4 cup of shredded cheese, 3 tblsp of onion (optional), skim milk, parsley, garlic salt and pepper
5. Stir the mixture well
6. Stir in baked potatoes
7. Transfer to baking dish
8. Bake uncovered at 350 for 30-35 minutes
9. Sprinkle with remaining cheese and bake 5 minutes (bake covered to prevent getting crusty, or uncovered if crusty desired)
