Baked Tortellini Soup

Ingredients
- 1 1/2 Lb Italian Sausage Links cut into 1 inch pieces ( I use Turkey Sausage)
- 1 C chopped onion
- 1 Clove minced garlic
- 1/4 tsp.pepper
- 2 Tb olive oil
- 4 C Beef broth
- 2 C water
- 1 1/2 tsp Italian seasoning
- 1 1/2 C chopped carrots
- 1 16 oz. can diced tomatoes
- 1 15 oz. can kidney beans (drained)
- 1 6 oz. can sliced black olives
- 2 C chopped zucchini
- 16 oz. tri-colored tortellini

Preparation
Step 1
Preheat oven to 325 degrees
In large roasting pan on stove heat olive oil and brown sausage, onions and garlic
Add broth,water,Italian seasoning and carrots, Place in preheated oven and bake for 30 mins.
Stir in tomatoes, beans, olives, and zucchini and bake another 15-20 mins.
Add tortellini and bake another 5 mins. Sometimes I need to add more liquid after the tortellini as they soak up quite a bit
Serve in bowls and garnish with parmesan cheese
