Ingredients

  • 1 onion, chopped
  • 1 stalk celery, diced
  • 1 carrot, diced
  • 1/2 lbs cremini/portabella mushrooms
  • 1/2 c white or red wine
  • 1 28oz can whole tomatoes, pureed in blender
  • 1 sprig fresh rosemary
  • 2 c cooked white beans

Preparation

Step 1

1) saute onion, celery, and carrots about 10 min.
2) increase heat to medium-high and add mushrooms for 5 min.
3) stir in wine
4) add tomatoes, rosemary, beans and 1/2 c water. simmer 15 min on low
