Chinese Chicken and Broccoli Stir Fry

Ingredients

  • 2 pounds skinless, boneless, chicken strips, cut into strips
  • 1 T. cornstarch
  • 1/2 tsp. ground ginger
  • 3 T. olive oil
  • 1 bunch broccoli, florets only
  • 1 T. minced garlic
  • 3 T. low-sodium soy sauce
  • 1/4 cup sherry
  • 1 tsp. sugar
  • 1 bunch green onions(scallions), cut into 2 inch slices(can use regular onion,sliced)
  • 1 red bell pepper, seeded and cut into strips

Step 1

In a large bowl, toss the chicken strips with the cornstarch, and ginger

In a large skillet, heat olive oil. Add the chicken, broccoli, garlic, soy sauce, sherry, and sugar, stirring and cooking over high heat, about 7 minutes.
Add the onions and red pepper and continue cooking and stirring for another 10 minutes, or until chicken is done.
Serve over rice.
