Ingredients

  • For the Salad:
  • 1 lb Broccoli, trimmed and cut into florets
  • 1 Red Bell Pepper, roasted, peeled and cut into thick strips
  • 1 Yellow Bell Pepper, roasted, peeled and cut into thick strips
  • 2 tbl tiny Capers, drained
  • 3 small Green Onions, thinly sliced
  • 1/3 cup Sun-dried Tomatoes, chopped
  • For the Dressing:
  • 2 tbl Basil Oil
  • 2 tbl Olive Oil
  • 1 tbl Balsamic Vinegar
  • 1 clove Garlic, crushed
  • Salt and fresh ground Black Pepper

Preparation

Step 1

Steam the broccoli until barely tender, 3-4 minutes. Rinse under cold water and drain well.

Combine all of the salad ingredients in a large bowl.

FOR THE DRESSING:
Combine all of the dressing ingredients in a small bowl. Whisk until thoroughly combined.

Pour the dressing over the salad. Toss carefully and serve.
