Ingredients

  • 5

    lbs potatoes

  • 1

    bunch green onions, thinly sliced

  • 1 or 2

    shallots, finely chopped

  • 2

    cups (or less) whipping cream

  • 1

    t granulated garlic

  • butter

  • salt and pepper

Directions

Boil the potatoes. Meanwhile, add cream, green onions, shallots butter, salt, pepper, and granulated garlic to a pot and bring to a boil. Cover and remove from heat. Mash the potatoes, preferably through a ricer. Add the cream mixture until you have the desired consistency. Adjust seasonings to taste.
