Irish Champs – Specialty Mashed Potatoes
One way to turn drab mashed potatoes into a distant memory.
- 5 lbs potatoes
- 1 bunch green onions, thinly sliced
- 1 or 2 shallots, finely chopped
- 2 cups (or less) whipping cream
- 1 t granulated garlic
- salt and pepper
Boil the potatoes.
Meanwhile, add cream, green onions, shallots butter, salt, pepper, and granulated garlic to a pot and bring to a boil.
Cover and remove from heat.
Mash the potatoes, preferably through a ricer.
Add the cream mixture until you have the desired consistency.
Adjust seasonings to taste.
