Fragrant Onion Dinner Rolls

Ingredients

  • 1 large onion
  • 1 tbsp olive oil
  • 1 cup rolled oats
  • 1 cup flour
  • 1 cup rye flour
  • 3 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tsp caraway seeds
  • 1/2 tsp salt
  • 1/4 cup oil
  • 3/4 cup water
  • 1 tbsp vinegar
  • egg replacer to equal 2 eggs

Step 1

Preheat oven to 350F.

In a medium frying pan on medium heat, saute the onions in oil until translucent. Set aside. In a food processor, grind the oat flakes until smooth. In a large bowl, stir together the ground oat flakes, flour, rye flour, baking powder, baking soda, caraway seeds, and salt. Add the oil, water, vinegar, egg replacers, and cooked onions. Stir together gently until just mixed. Spoon dough into lightly oiled muffin tins and bake for 15-17 minutes or until a toothpick or knife comes out clean.
