Peaches and Cream Omelet

Ingredients

  • 5 eggs
  • 5 T water
  • 1/4 tsp salt
  • 1 T butter (or use cooking spray)
  • 1 1/2 T sugar
  • 1/2 C sour cream
  • 1/2 C sliced fresh or well drained canned peaches

Preparation

Step 1

1. Mix eggs, water, sugar and salt with fork
2. Spray omelette pan or melt butter until pan is hot; pour in egg mixture
3. As edges begin to cook, use spatula to move cooked portions to the center allowing the uncooked eggs to flow to the botom - tilt pan as necessary
4. When eggs are just about all set - spread 1/2 of sour cream on eggs; add about 1/3 C of the peaches; fold omelette over; spread remaining sour cream on top and remaining peaches.
5. Slide onto serving plate.
