Apple Loaf

Ingredients
- 4 C diced or shredded peeled (McIntosh)apples
- 2 C sugar (use an additional 2 tsp for topping)
- 1 C butter melted and cooled (2 sticks)- may use 1/2 C unsweetened applesauce and 1/2 C butter
- 2 C flour
- 1 C WW Pastry flour
- 2 tsp each - baking soda and cinnamon
- 2 lg eggs
- 1 tsp vanilla

Preparation
Step 1
1. Mix apples and sugar. Leave at room temp. 2 hours and stir occasionally (I've used it immediately)
2. Mix flour, soda, cinnamon and stir into apples; stir in butter, eggs, vanilla
3. Put half into two pans and sprinkle w/ 1 tsp sugar each.
4. Bake at 325 for 1 1/4 - 1 1/2 hours until pick clean; cool 10 min. remove to rack
5. Refrigerate loaves.
