Pear and Blue Cheese Salad

A juicy variety of pear, such as a Williams, is just perfect for this dish. You can use any other blue cheese, such as Stilton or Gorgonzola, in place of the Roquefort if you prefer.

Ingredients
- 4 ripe pears
- 4 oz Roquefort cheese
- 1 tablespoon balsamic vinegar
- 2 tablespoons olive oil
- salt and ground black pepper

Preparation
Step 1
Cut the pears into quarters and remove the cores. Thinly slice each pear quarter and arrange on a serving platter.
Slice the Roquefort as thinly as possible and place over the pears. Mix the oil and vinegar together and drizzle over the pears. Season with salt and pepper and serve.
