Broccoli Cheese Soup

Ingredients

  • 1 large head broccoli, cut up
  • 1/2 cup butter
  • 1 med. onion, chopped
  • 1/2 cup flour
  • 2 cups milk
  • 2 cans chicken broth
  • 1 cup cheddar cheese, grated (med or sharp)
  • salt and pepper to taste

Preparation

Step 1

Cook broccoli pieces in pan or steam them until tender. Drain and set aside.

Saute onion in butter til transparent. Stir in flour and cook about 5 min.

Add milk slowly, continually stirring.

Stir in cheese and blend until smooth. Slowly blend in chicken broth in sauce mixture, then add broccoli. Stir to blend well. Add salt and pepper to taste. Simmer about 15 min.

Makes 4-6 servings.

If you don't want it chunky, you can pit it into the blender.
