Cauliflower Burgers (or Fritters)

Ingredients

  • 4 cups steamed cauliflower roughly chopped
  • 2 cloves garlic, crushed
  • 1 c whole wheat flour
  • 2 eggs
  • 1/2 c Romano cheese
  • 1/4 c parsley, finely chopped
  • 1/4 c hot water
  • salt and pepper
  • 1/4 c olive oil
  • sandwich thins (bread)
  • chipotle or dijon mustard
  • slices of pepper jack cheese

Preparation

Step 1

In a large bowl combine cauliflower, flour, garlic, eggs, grated cheese, parsley, salt and pepper. Add water if you need to make batter more dense than pancake batter. (thats for fritters....for burgers I didn't add any water)

On med heat, add 1 T oil in skillet coating the bottom of the pan. You can use a 1/4 c measuring cup to do fritters or you can shape 4 large patties out of the mixture. Cook until golden brown, turn and cook another few minutes.

Put on thin sandwich bread with mustard and pepperjack cheese. We also used sliced tomatoes and lettuce.
