This tasty corn casserole gets plenty of flavor from sweet onions, cream style corn & cheddar cheese plus a little zip from hot pepper sauce.

Ingredients

  • 2 lge Vidalia or sweet onions, finely chopped
  • 1/2 cup butter
  • 1 cup sour cream
  • 1/2 cup milk
  • 1/2 tsp dill weed
  • 1/4 tsp salt
  • 2 cups shredded cheddar cheese, divided
  • 1 egg, lightly beaten
  • 1 can (14 3/4oz) cream style corn
  • 1 pkge (8 1/2oz) corn bread/muffin mix
  • 4 drops hot pepper sauce

Preparation

Step 1

In lge skillet, sauté onion in butter until tender.
In small bowl combine sour cream, milk, dill & salt until blended, stir in 1 cup cheese.
Stir into onion mixture, remove from heat, set aside.
In a bowl combine egg, corn, corn bread mix & pepper sauce. Pour into greased 13x9 baking dish.
Spoon onion mixture over top.
Sprinkle with remaining cheese.

Bake uncovered at 350 for 45-50 minutes, or until top is set & lightly browned. Let stand for 10 min. before cutting
