Onion Roasted Potatoes

• 4 large potatoes
• 1 packet (2 oz) onion soup mix
• olive oil

Preparation

Step 1

Chop potatoes into large bite sized pieces. Spray cookie sheet with cooking spray (I line my with foil first, these babies stick like crazy). Spread potatoes on cookie sheet in a single layer. Drizzle olive oil over potatoes and sprinkle onion soup mix packet over potatoes. Stir to coat. Bake at 375 for 30 minutes, stir. Bake for another 15 minutes or until potatoes are soft. The little crusted bits are the best part. :)
