Garlic Cheese Chicken Rollups
- 4 boneless, skinless chicken breast cutlets (thin-that amounts to about 1 lb. or so)
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 tablespoons butter, melted
- 3 about 3 oz. garlic cheese spread (I used the wedges from The Laughing Cow--whom I do not endorse, yadda yadda. You can substitute and play with this part of the recipe)
In a shallow bowl/dish mix breadcrumbs and Parmesan.
Dip 1 side of chicken in melted butter and then the breadcrumb mixture.
On bare side of chicken, smear garlic cheese on each end (and some in the middle if you want...use your judgement)
Roll up each chicken breast and secure with toothpick(s)
Place roll-ups in greased 9 x 13 baking dish and drizzle with any remaining butter.
Bake in a 350 degree preheated oven for 35 minutes.
