Ingredients

  • 2 1/4 cups flour
  • 3/4 cup dry sweetener
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/3 cup soy milk
  • 1/4 cup olive oil
  • 1/4 cup margarine
  • 1 tsp almond extract
  • egg replacer, equal to 2 eggs
  • 1 cup almonds, chopped
  • 3/4 cup cranberries

Preparation

Step 1

Preheat oven to 350F.

In a large bowl, stir together the flour, sweetener, baking soda, salt, and cinnamon. Add the soy milk, oil, margarine, almond extract, egg replacer, almonds, and cranberries and stir together until well mixed. Spoon a heaping tablespoon of dough onto a lightly oiled cookie sheet and press flat with your fingers. Bake for 10 minutes or until edges are browned.
