Tex-Mex Black bean and Turkey Burgers

Ingredients

  • Topping:
  • 1/2 cup diced tomato
  • 1/2 cup diced cucumber
  • 2 green onions, sliced
  • 1/2 tsp. oregano
  • 1 tbsp. lime juice
  • 2 tsp. olive oil
  • salt and pepper to taste
  • 1/2 cup guacamole
  • 1 cup shredded lettuce
  • Burgers:
  • 1/2 cup onion, finely diced
  • 1 clove garlic, minced
  • 1/2 cup cooked corn
  • 1/2 cup black beans, drained, rinsed
  • 1 1/2 lbs. ground turkey
  • 1 egg
  • 1/4 cup bread crumbs
  • 1 tsp. paprika
  • 2 tsp. chili powder
  • salt and pepper to taste
  • 4 burger buns

Preparation

Step 1

Combine toppings and set aside. Heat grill on medium. Combine burger ingredients. Divide mixture evenly into four and make patties. Grill burgers 5-7 minutes each side. Spread guacamole on the bottom half of each bun,m top with lettuce, burger and spoonfuls of the topping mixture.
