Mashed Parsley Potatoes

Cut potatoes into quarters; place potato and water in a medium-size microwave-safe bowl. Cover tightly with heavy-duty plastic wrap; fold back a small edge of wrap to allow steam to escape. Microwave at HIGH 9 minutes or until tender, stirring after 4 minutes. Drain potato; return to bowl. Add milk and remaining ingredients. Mash potato masher or fork until potato is mashed and mixture is combined. Yield 4 servings. Serve with meat loaf and steamed green beans.
