Cinnamon-Mascarpone Baked Pears
- 2 medium ripe pears
- 2 tsp brown sugar
- 2 tsp unsalted butter
- 1/4 c white grape or apple juice
- 6 Tbsp mascarpone cheese
- 2 tsp white sugar
- 1/4 tsp cinnamon
Preheat oven to 375
Halve pears lengthwise & core. Place cored side up in medium baking dish. Spoon 1/2 tsp. brown sugar & 1/2 tsp. butter into each cavity. Pour juice into baking dish and bake 25 minutes, until pears are tender.
Combine cheese, sugar & cinnamon.
Top each pear half with 1 1/2 tablespoons cheese mixture and serve warm.
