Ingredients

  • CRUMBLE TOPPING:
  • 1 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1 cup vegetable oil
  • 3 large eggs
  • 15 oz can pumpkin
  • 3 cups flour
  • 3 tsp cinnamon
  • 1 tsp nutmeg
  • 3 tsp baking or pumpkin spice
  • 1 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 cup chocolate chips
  • 3 Tbsp flour
  • 3 T brown sugar
  • 2 T softened butter
  • 2 tsp cinnamon
  • 1 tsp baking or pumpkin spice
  • 1/8 cup ground pecans (chop in blender)

Preparation

Step 1

Preheat oven to 350. Butter or grease 2 loaf or an 8x8 pan. Beat sugars and oil in large bowl until blended. Mix in eggs and pumpkin. Sift flour, spices, baking soda, salt and baking powder in 2nd bowl. Stir this flour mixture into pumpkin mixture slowly. Mix til well blended. Stir in chocolate chips. Divide batter into loaf pans and sprinkle some chocolate chips & the crumble topping on top. Bake til knife comes out clean - approx 1 hour and 15 min. Transfer to rack and let cool 10-15 minutes. Remove loaf from pan and let cool completely on rack.
