Twice Baked Cauliflower

Ingredients
- 16 ounces frozen cauliflower
- 1/2 cup sour cream (I used light sour cream)
- 2 ounces cream cheese (cut up)
- 1 tablespoon butter
- 1 cup cheddar cheese, divided
- 6 slices bacon, fried and crumbled, divided
- 1 1/4 teaspoons salt
- 1/4 teaspoon pepper

Step 1
Preheat oven to 400º. Cook cauliflower according to package, drain well. Place the cauliflower in a food processor. Add the sour cream, cream cheese, butter, half the cheese, half the bacon, salt and pepper to processor. Process until contents have the smooth consistency of mashed potatoes. Grease casserole dish and pour in the cauliflower mixture. Top with the remaining cheese and crumbled bacon. Bake uncovered 20 minutes at 400º or until lightly browned.
