Avocado Tequila Cold Soup - Taste Toronto recipe

Ingredients

  • Place sugar and 1 cup of water into a pot and simmer until dissolved. Cool.
  • Place avocado in a food processor and add juices of 2 limes, sour cream and pulse until smooth. Season to taste with salt and pepper. In a separate container mix sugar syrup, Tequila, Tabasco sauce and the juices of 4 limes. Set aside.
  • Combine avocado mix and Tequila stock to make the soup. Ladle soup into bowls or fancy glasses. Add a dollop of sorbet to the center of soup. Serve cold. Will keep in the fridge for about 2 days.
