  • 3 medium eggs
  • 1 cup buttermilk
  • 1/3 cup corn oil
  • 1/3 tsp vanilla
  • 2 1/2 cups unbleached flour
  • 3/4 cup granulated sugar
  • scant teaspoon salt
  • scant teaspoon cinnamon
  • 1 tablespoon baking powder
  • 1 1/2 cups fresh or frozen blueberries

Step 1

beat eggs. stir in buttermilk, oil and vanilla.

mix flour, sugar, salt, cinnamon and baking powder; gently add to egg mixture, stirring only until moist.

fold in blueberries.

bake muffins at 400 for 20 minutes.
