- 1/4 cup butter
- 2/3 cup sugar
- 4 eggs (separated)
- 2 tbsp grated lemon rind
- 1/3 cup flour
- 1 cup milk
- 1/2 cup lemon juice
- Pinch salt
- Confectioner sugar for topping

Step 1
In a ‘bain marie' at 350 degree for 40 - 45 minutes
Cream butter with 2 tbsp sugar. Beat in egg yolks and lemon peel. Stir in flour just until blended. Add milk and lemon juice. Beat egg whites in a separate bowl with salt.
Gradually add remaining sugar to whites. Fold egg whites into the lemon base. Spoon into a buttered 8" baking casserole dish. Place in a ‘bain marie'. Bake 40 - 45 minutes or until top puffs and become golden. Dust with confectioner sugar and garnish with fresh fruit.
This dessert will be runny due to pudding base and better served in bowls.
Serve warm or cold
