Almond Orange Toss

Ingredients
- 1/4 cup sliced almonds
- 1 tablespoon plus 1 teaspoon sugar
- 3 cups bite size Bibb lettuce (about 2 heads)
- 1 cup celery
- 2 green onions thinly sliced
- 1/2 can (11oz. size) mandarin orage segments, drained

Preparation
Step 1
Cook almonds and sugar over low heat
Stirring constantly until sugar is melted and almonds are coated
Cool
Break apart almonds
Mix lettuce, celery, onions and oranges in salad bowl
Pour dressing over lettuce mixture
toss until well coated
Toss with almonds
Dressing: 2 tablespoons snipped fresh parsley or parsley flakes
1 tablespoon sugar
2 tablespoons vegetable oil
1 tablespoon vinegar
1/4 teaspoon salt
Dash pepper
Shake all ingredients in tightly covered container
