Banana Nut Bread

Ingredients

  • 1 3/4 cups sifted all-purpose flour
  • 1 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup soft shortening
  • 2/3 cup granulated sugar
  • 2 eggs, unbeaten
  • 1 cup mashed ripe bananas (2 or 3)
  • OPTIONAL: 1/2 cup chopped nuts

Preparation

Step 1

Heat oven to 350 degrees

grease 9"x5"x3" loaf pan

Sift flour, baking powder, baking soda, salt

With electric mixer at medium or cream speed, thoroughly mix shortening with sugar, then add eggs until light and fluffy, about 4 minutes. Then at low or blend speed beat in flour alternately with bananas just until smooth. If desired, add nuts.

turn into greased loaf pan and bake 1 hour or until toothpick inserted into middle of bread comes out clean.

Cool in pan for 10 minutes.

Remove from pan and cool overnight before slicing.
