  • 1/2 cup old-fashioned oats, uncooked
  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/4 tsp salt
  • 1 egg
  • 3/4 cup skim milk
  • 1/4 cup salad oil
  • 1/2 pint fresh raspberries

Step 1

in 10-inch skillet over medium-low heat, toast oats until lightly browned, stirring constantly, set aside. preheat oven to 400, line 12 muffin-pan cups.

in large bowl, mix flour, sugar, baking powder, and salt. in small bowl, beat egg, milk and salad oil until blended;stir in flour mixture just until moistened(batter will be lumpy) gently fold raspberries and toasted oats into batter.

spoon batter into muffin-pan cups. bake 20 minutes
