Cornbread Casserole with Caramelized Onions

Ingredients

  • 1 large onion chopped
  • 2 tablespoons butter
  • 1 egg
  • 2 tablespoons water
  • 1 can (15 oz) cream style corn
  • 1/4 cup instant nonfat dry milk
  • 1 pkg (8 oz) cornmeal muffin mix
  • 1/2 cup shredded cheddar cheese

Preparation

Step 1

Preheat oven to 425. In a medium skillet, saute onions in butter over medium high heat until golden, about 10 minutes. In a medium bowl, mix egg and water. Stir in corn, dry milk and muffin mix until blended. Stir in onions. Spread into greased 8 x 8 inch baking dish. Sprinkle with cheese. Bake for 25-30 minutes or until puffed and golden. Let stand 10 minutes and cut into squares. May be refrigerated overnight or frozen and reheated.
