Spinach Steak & Mushroom Salad

Fresh ingredients make this a delightful summer meal. Arrange the grilled strip loin, sauteed mushrooms & red onion on a bed of fresh spinach leaves. Drizzle the creamy horseradish over top.

Ingredients

  • 1 lb. Strip Loin Grilling Steak, 1" thick
  • 1/2 tsp each Salt & Pepper
  • 2 Tbsp. Olive Oil
  • 2 C. Mushrooms, halved
  • 1 Clove Garlic, minced
  • 1 tsp. Dried Thyme
  • 1 Bag Baby Spinach
  • 1/2 C. Red Onion, thinly sliced
  • Creamy Horseradish Dressing;
  • 1/4 C. Hellman's Real Mayonnaise
  • 2 Tbsp. Milk
  • 2 Tbsp. Prepared Horseradish
  • 1/4 tsp. each Salt & Pepper

Preparation

Step 1

In bowl, whisk together mayonnaise, milk, horseradish, salt & pepper.
Season steak with half each of the salt & pepper. Place on greased grill pan over med-high heat; close lid & grill, turning once, till med-rare, approx. 8 min. Transfer to cutting board & tent with foil; let stand for 10 min. Thinly slice across the grain.
Meanwhile, in lg. skillet, heat oil over med-high heat; saute mushrooms, garlic, thyme & remaining salt & pepper till no liquid remains & mushrooms are golden, about 5 min.
Divide spinach among 4 plates. Divide mushrooms, steak & onion over top; drizzle with dressing & serve.
