Ingredients

  • 2

    pounds (about 2 very larqe) Vidalia Sweet Onions, peeled and thinly sliced

  • 2

    tablespoons unsalted butter

  • 2

    cups chicken broth

  • 1

    bouquet qarni (see above, made with saqe, thyme, parsley and celery)

  • 2

    cups heavy cream

  • Salt and whole white pepper In a pepper mill

  • Chopped green onion or fresh chives,

  • For garnish Chopped fresh sage, parsley and/ or thyme, for qarnish

Directions

1. Sweat onion in butter in soup pot, covered, over medium heat until softened, stirring occasionally. Add broth and bouquet garni, bring to simmer, and simmer until onions are falling-apart tender. 2. Remove and discard bouquet' garni. Puree soup in food processor or.blender (in batches, if necessary). Stir in cream and season with salt and white pepper. Chill, taste and adjust seasonings, and serve garnished with green herbs and white pepper.
