Pineapple Bread (Good)

Ingredients

  • 2 cups sifted four
  • 4 tsp. baking powder (level)
  • 1/2 tsp. baking soda (level)
  • 3/4 cup sugar
  • 1/4 cup oil
  • 1/2 tsp. salt
  • 3/4 cup drained pineapple
  • 1/2 cup pineapple juice
  • 1/2 tsp. vanilla
  • 2 beaten eggs
  • 12 cut maraschino cherries
  • 1 cup choppe walnuts
  • 1 cup chopped dates (optional)

Preparation

Step 1

Cream well together the eggs, oil and sugar. Sift together the dry ingredients and add to the creamed mixture alternatly with the drained pineapple and juice. Add nuts and dates if using. Fold in chopped cherries. Stir only enough to moisten the dry ingredients.

Line loaf pan with foil or waxed paper. Pour in mixture. Bake at 350 for 1 1/4 to 1 1/2 hours. Do not overbake.

For 2 small loaf pans, bake about 45 minutes.
