Greek Spinach Salad

  • For the dressing:
  • Green onion
  • Jalapeno
  • Curried chickpeas
  • White wine
  • Vinegar
  • Sugar
  • Mint pesto (optional)
  • Lemon juice
  • For the salad:
  • Spinach
  • Lamb roast or anything else leftover
  • Feta cheese



Step 1

Saute onion and jalapeno in the oil from the curried chickpeas. When almost finished, add chickpeas to warm. Pour in white wine to deglaze pan. Reduce. Add vinegar. Reduce. Sugar to taste. Toss with salad ingredients. Douse with lemon juice and salt.
