Ingredients
- 2 lbs Italian sausage (1 hot/1 mild)
- 2 cups chopped onion
- 2 cloves garlic
- 7 cups beef broth
- 2 cans diced tomatoes
- 2 cups thinly chopped carrots
- 1 tsp oregano
- 1 tsp basil
- 3 tsp parsley
- 1 diced green pepper
- 1/2 cup dry red wine (optional)
- 8 oz tortellini
Details

Preparation
Step 1
Bring all to a boil and then simmer for 2-3 hours. Add tortellini 10 minutes before serving.
